Quinoa Butternut Squash Mangold Salad with Rapeseed Oil

Ulli's Quinoa Butternut Squash Mangold Salad Recipe with our organic, cold-pressed rapeseed oil!


28 oz  Butternut Squash
1 Tbsp Olive Oil
3 Tbsp Ulli's Organic Cold-Pressed Rapeseed Oil
1 1/2 Cups Quinoa
Juice of 1/2 Lemon
A Handful of Mangold
Filets of 1 Clementine


  1. Cut and roast the Butternut Squash as desired with Olive Oil.
  2. Cook the Quinoa as stated at the package.
  3. Mix the Butternut Squash, Clementine, and Mangold with the Lemon juice and Raps Seed Oil.
  4. Place Quinoa on a plate and place the Squash mixture on top of it.
